Dinner Time


Last night, I cooked dinner for my brother and Justin. I can't take full credit for this recipe, because my friend, Brittany, made a similar dish for me when I went to stay with her last week. She and her husband, Robert, were so gracious and wonderful hosts for my night on the coast. The bread recipe, I also got from my friend Emilie. It is so unhealthy, but it's delicious. Here you go.
{Note: This is not the actual pasta I made, but it looks a lot like it.}
 
Garlic Shrimp Pasta
12 oz Angel Hair Pasta
½ Stick Butter
Salt and Pepper
Olive Oil
2 Cloves Garlic (separated, peeled and chopped)
1 Pound Shrimp (peeled and deveined)
2 Cans Diced Tomatoes in Juice
½ Cup Dry White Wine (I used Sauvignon Blanc)
1 ½ Tablespoons Chopped Basil
¼ Cup Chopped Parsley
Shredded Parmesan Cheese
 
Boil pasta in water with butter and salt; then drain. While pasta is cooking, thinly coat a large skillet with olive oil and heat over medium temp. Once skillet is heated, add garlic and continuously stir until tender (about 1 minute). Do not burn garlic. Add shrimp (lightly seasoned with salt and pepper) and toss around in skillet until pink (about 3-5 minutes). Remove shrimp from skillet and set aside. Add diced tomatoes, wine, basil and parsley to skillet over medium high temp. Bring sauce mixture to a light boil, stirring occasionally until liquid is reduced by half (about 8-12 minutes). Add shrimp back to skillet and toss around until heated through. Serve sauce and shrimp mixture over pasta and top with parmesan cheese.

Creamy Garlic Bread
1 Loaf French Bread
1 Stick Butter (softened)
1/3 Cup Mayonnaise
1/3 Teaspoon Garlic Powder
Grated Parmesan Cheese
Chopped Parsley

Set oven to Broil. Slice French bread into 1 inch slices and place on covered baking dish. In a bowl, mix butter, mayo, garlic powder, a few good shakes of parmesan cheese and a couple of sprinkles of chopped parsley. Stir until creamy and spread on top side of bread slices. Place in oven about 8-10 minutes or until bread is toasted on sides.

  3. I emailed this to Stephanie yesterday when you posted this bc I knew she would think it sounded delish. Her and Wally made it last night for us and it was, of course, delish!
