Omelette Muffins


I saw this idea on Pinterest, which by the way has changed my life. Since we LOVE eggs around this house, I knew I had to try this one out. It just looked so easy, convenient and customizable to everyone eating. It's sort of like an "at home" omelette station. The basic idea is that you put eggs in muffin tins, scramble them with a fork, add in the toppings you want and bake.
After gathering the toppings I wanted at the grocery store, I began with a little organizing. I chopped up the toppings and placed them into individual bags in the refrigerator for easy making in the future. My hope is that we can throw these together while getting ready for work and have a meal to go. Here's all my toppings bagged up in the refrigerator.
The ones we used were crumbled bacon, green onions, cheese, mushrooms, spinach, black forest ham and drained Rotel tomatoes.
Here's everything you need...
Eggs (one per muffin), muffin tin, toppings and salt and pepper.

Just crack one egg (you could substitute egg beaters to be healthy) in each muffin tin and scramble with a fork. Place in desired toppings and salt and pepper. Whisk it around one more time with the fork.
This is what ours looked like right before going into the oven at 350 degrees for 20 minutes. To test to see if they are done, just poke with a fork and make sure it comes out clean.

This is what the end up looking like. They were also DELICIOUS!!

I think these will be such an easy breakfast idea for us on busy mornings. I also think it would be fun if you had overnight company to let them pick their toppings in the morning. Hope you all try this one out and enjoy!

In other news... Post coming soon about my new nephew, Hudson Lindley, who is an absolute doll!! I'm going to wait to let his mommy debut him on her blog before I do. I'll just warn you that he's too cute for words!!
